Granny's Berry Bake
A good old fashioned tea cake that's a real crowd pleaser but also super simple to make, helping you use up any soft and squishy berries or stone fruit.

- 4 eggs
- 2 cups sugar castor
- 1 cup yoghurt plain
- 3 cups plain flour
- 3 tsp baking powder
- 1 tsp vanilla extract
- 1/2 cup oil canola
- 1 cup berries washed & dried
In one large mixing bowl add the eggs and sugar and beat until well combined
Add in the yoghurt and stir until well incorporated into the mixture
Sift in the flour and baking powder
Add in the vanilla extract and oil and mix
preheat oven to 180C
Pour batter into a well greased pie dish
Bake it for 5 minutes only before adding the berries, this stops the berries from sinking to the bottom the cake
Remove from the oven and add the berries, dropping them from a height so they get embedded into the mixture
Bake for 30 - 40 minutes depending on your oven
