Granny’s Berry Bake

This is my go-to quick and simple cake I make if I need something easy either as a nice homemade bake for tea with friends or a playdate, or as a simple gift to drop off to show someone I’m thinking about them. The main reason I love it so much is that the recipe calls for ingredients you most likely have at home already. It’s also a fantastic way to use up berries that are starting to look less than perfect.

It’s an ancient recipe that was from my gran on my mom’s side. I still have the hand written scrap of paper that’s lived tucked away in the back of heirloom recipe books for decades.  So for nostalgia sake I like to bake this a lot in honour of all the bakers that have come before me in our family.

Traditionally I think it was made with cherries or other stone fruit (peaches, apricots, nectarines etc). But as we eat a lot of berries and often have the odd punnet of over ripe strawberries or blueberries that are that little bit too soft to enjoy eating fresh, then I toss them on top of this and it turns out perfectly every time!

Granny's Berry Bake

A good old fashioned tea cake that's a real crowd pleaser but also super simple to make, helping you use up any soft and squishy berries or stone fruit.

Ingredients
  

  • 4 eggs
  • 2 cups sugar castor
  • 1 cup yoghurt plain
  • 3 cups plain flour
  • 3 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 cup oil canola
  • 1 cup berries washed & dried

Instructions
 

  • In one large mixing bowl add the eggs and sugar and beat until well combined
  • Add in the yoghurt and stir until well incorporated into the mixture
  • Sift in the flour and baking powder
  • Add in the vanilla extract and oil and mix
  • preheat oven to 180C
  • Pour batter into a well greased pie dish
  • Bake it for 5 minutes only before adding the berries, this stops the berries from sinking to the bottom the cake
  • Remove from the oven and add the berries, dropping them from a height so they get embedded into the mixture
  • Bake for 30 - 40 minutes depending on your oven
